We’re well into summer now, and the heat leaves us constantly on the hunt for snacks that’ll keep us cool without overindulging in ice creams and sorbets. Enter these banana pops: fruit, covered in homemade peanut butter and chocolate, topped with crunchy granola that’s filled with nutritious seeds and grains - aka, everything we want in a mid-afternoon summer snack.
It couldn’t possibly get any easier, but be warned: these will disappear faster than you realize!
Granola, PB and Dark Chocolate Banana Pops:
- 2 bananas, cut into half
- 1/4 cup creamy peanut butter
- 1/4 cup dark, milk or white chocolate, melted (we used dark, but go with your favourite!)
- 1/3 cup Rice Power cereal mix
- 4 craft or popsicle sticks
Insert a popsicle stick into each piece of banana, and spread each one with peanut butter.
Place on a lined baking tray and freeze until solid, about 10 minutes.
Dip each banana into the melted chocolate (alternatively, use a spoon or fork to drizzle it over) and immediately sprinkle with the cereal.
Place them back on the tray to freeze until set, another 20 minutes or so.
